You can't beat that.Printable recipes: https://www.dimitrasdishes.com/meals-in-60-minutes-5-recipes-ground-beef-stew-for-dinner/For the Stew:Ingredients1 onion, finely chopped1/4 cup olive oil5 garlic cloves, gratedsalt2 pounds ground beef, poultry, or lamb1 (16 ounces) can diced tomatoes, pureed1-2 teaspoons crushed red pepper flakes2 teaspoons ground sweet paprika1 teaspoon ground black pepper, or to taste1 teaspoon salt or to taste1 teaspoon finely chopped fresh parsley5-6 potatoes, cubed1 bag frozen green peasoptional: 2 jalapenosInstructionsCook the onion and the olive oil over medium heat until soft and golden Season with a pinch of salt.Add the garlic and warm through for a few seconds.Add the ground beef, salt, pepper, crushed red pepper flakes, and oregano.Add the tomatoes and paprika and cook over medium heat for about 20. minutes or until the sauce is thickened.Add the potatoes and 4 cups of water. Add the jalapenos if desired. Season with a teaspoon of salt and bring to a boil. Reduce the heat to medium and cook for about 15 minutes or until the potatoes are fork-tender.Add the green peas and warm through.Taste and adjust the seasoning if needed.Serve with rice, bread, or cauliflower rice.Basmati Rice:Ingredients2 cups Basmati rice2 teaspoons salt2-4 tablespoons olive oil or melted butter2 cups water or brothGarnish: finely chopped parsley or mintInstructionsRinse the rice 4-5 times with cool water and soak in a bowl of cool water for 15 minutes. Discard the water and add the rice to the bowl of a rice cooker.Add the salt, water or broth, and olive oil. Mix together and press the white rice button.Once the rice cooker beeps, the rice is ready. Fluff it and serve or keep warm in the machine.NotesIf the rice has been warming in the rice cooker for longer than an hour, it might be a bit dry. Add 1/4 cup of water or broth and let it warm through.Salad:Ingredients1 English cucumber, choppeda quarter of an onion, finely choppedcherry or grape tomatoes halvedbell pepper, slicedolive oilsaltdried crushed oreganofeta cheese, crumbledOptional: kalamata olives, capersInstructionsAdd all of the ingredients into a bowl and mix together. Enjoy!Palmiers:Ingredients1 sheet puff pastry, defrosted1 cup sugar1/2 teaspoon cinnamon1/8 teaspoon saltInstructionsThese are beautiful little heart-shaped cookies. Easy to make. You've got to give them a try!!!Preheat oven to 400 degrees.Mix the sugar, salt, and cinnamon together in a bowl.Spread some of the sugar on your counter and place the defrosted puff pastry over it.Roll out the puff pastry 1-2 inches on each side.Evenly spread the sugar mixture all over the top of the puff pastry. Press it down with the rolling pin.Keep rolling the puff pastry toward the center until both sides meet.Pinch the tops of both sides together and sprinkle with some more sugar.Slice the dough into 1-inch strips and place on a baking sheet lined with parchment paper.Sprinkle more sugar mixture over the cookies.Bake for 20 minutes or until the sugar has caramelized and turned a beautiful golden brown.Remove from the oven and allow to cool.Serve with hot tea or coffee.
