Day 10 - 10 Days of Everyday Miso Soup • Salmon and Vegetables | Graces Japanese Cooking

Last day. Here we go!

Can I be honest. I wasn’t sure of this one. Salmon in miso soup? Until I tried it not so long ago and fell completely in love with the intense flavor of the salmon combined with the sweetness of the root vegetables. The miso is really what brings this soup together. I really hope you try this one:)

Recipe (serves 2-3 people):

5 oz salmon
1 medium potato or 5-6 mini potatoes
1/2 medium carrot
handful of baby spinach

1. Heat dashi to medium heat.
2. Chop potato and carrot.
3. Cut salmon into bite size pieces.
4. Boil potatoes and carrots until soft and cooked through.
5. Add salmon. Cover and cook until cooked through. 3-5 minutes.
6. Add spinach.
7. Turn off heat. Wait 3-5 minutes. Strain in miso. Taste and adjust if needed.
8. Enjoy.
