Curried Potatoes (咖喱土豆) | The Chinese Cuisine

These potatoes are delicious and flavorful with just the right amount of spice.

INGREDIENTS:
- 3 red potatoes, peeled and diced
- thin ginger strips
- 3 cloves garlic, minced
- 1/2 red onion, diced
- 1 tsp. paprika
- 2 tsp. curry powder
- soy sauce
- salt

DIRECTIONS:
1. add olive to a pot
2. pan-fry the potatoes in the oil
3. take out the potatoes and some of the oil
4. cook the ginger strips, onions, and garlic in the remaining oil
5. add in the curry powder and paprika and let it distribute evenly
6. add in potatoes
7. add in a splash of soy sauce, some water, and some salt
8. once the water evaporates and the potatoes are evenly coated, take out.
9. serve and enjoy!
