Curried Egg and Potato Salad | Cooksmart | Sanjeev Kapoor Khazana

A unique dish, curried eggs and potato salad make their way to the salad table often as it is a family favorite.

CURRIED EGG AND POTATO SALAD

Ingredients

6 eggs, boiled and peeled
2 medium potatoes, boiled and peeled
1 tsp curry powder
1 head iceberg lettuce, soaked in water
1 head lollorosso lettuce, soaked in water
1 head romaine lettuce, soaked in water
4 tbsps mayonnaise sauce
1½ tbsps red chilli sauce with vinegar
1 tsp mustard sauce

Method

1. Drain and tear all the lettuce leaves and put into a bowl. Add 2 tbsps mayonnaise and mix with hands. Transfer them into a serving bowl.
2. Cut potatoes into big cubes and put into the bowl. Quarter the eggs and keeping aside 2-3 pieces for garnish, put the rest in the bowl.
3. Mix 2 tbsps mayonnaise, red chilli sauce, mustard sauce, curry powder in a another bowl and add it to the egg-potato mixture. Mix well.
4. Put this salad over the lettuce, garnish with the reserved egg pieces and a fresh red chilli flower. Serve immediately.
