Recipe in English:

Ingredients:
Prepare Spicy Tandoori Chutney:
-Mayonnaise Cup
-Dahi (Yogurt) 1 Cup
-Tandoori masala 2 tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder tsp
-Namak (Salt) 1 pinch or to taste
-Lemon juice 2 tbs
-Cooking oil 1 tsp
-Orange food color tsp or as required
-Koyla (Charcoal) for smoke
Prepare Green Chutney:
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Lehsan (Garlic) cloves 4-5
-Zeera (Cumin seeds) 1 tsp
-Hari mirch (Green chillies) 7-8
-Namak (Salt) tsp or to taste
-Lemon juice 2-3 tbs
-Water Cup or as required
Prepare Crispy Tandoori Pakoray:
-Pyaz (Onion) sliced 1 Cup
-Gajar (Carrot) grated 1 Cup
-Band gobhi (Cabbage) shredded 1 & Cup
-Aloo (Potato) julienne 2 medium
-Hari pyaz (Spring onion) chopped Cup
-Hari mirch (Green chilli) sliced 1 tbs
-Hara dhania (Fresh coriander) chopped 2-3 tbs
-Adrak lehsan paste (Ginger garlic paste) 2 tsp
-Tandoori masala 1 tbs
-Baking soda tsp
-Zeera (Cumin seeds) 1 tsp
-Namak (Salt) 1 tsp or to taste
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Baisan (Gram flour) sifted 2 & Cups
-Water Cup or as required
-Cooking oil for frying
Assembling:
-Dahi (Yogurt) whisked
-Nimco sev
-Peanuts roasted
-Lal mirch (Red chilli) crushed

Directions:
Prepare Spicy Tandoori Chutney:
-In a bowl,add mayonnaise,yogurt,tandoori masala,Kashmiri red chilli powder,salt,lemon juice & whisk well.
-In a saucepan,add cooking oil,prepared sauce,orange food color,mix well & cook for a minute.
-Turn off the flame & give coal smoke for 2 minutes.
-Let it cool & set aside.
Prepare Green Chutney:
-In a jug,add fresh coriander,mint leaves,garlic,cumin seeds,green chillies,salt,lemon juice, water,blend well & set aside.
Prepare Crispy Tandoori Pakoray:
-In a bowl,add onion,carrot,cabbage,potato,spring onion,green chillI,fresh coriander,ginger garlic paste,tandoori masala,baking soda,cumin seeds,salt,coriander seeds & mix well.
-Add gram flour & mix until well combined.
-Gradually add water & mix well.
-In a wok,heat cooking oil & fry on medium flame until golden & crispy.
Assembling:
-On fried fritters,add yogurt,prepared spicy tandoori chutney,prepared green chutney,nimco sev, peanuts,red chilli crushed & serve!

-Bowl mein mayonnaise,dahi,tandoori masala,Kashmiri lal mirch powder,namak aur lemon juice dal ker ache tarhan whisk ker lein.
-Saucepan mein cooking oil,tayyar sauce aur orange food color dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Chulha bund ker dein aur 2 minute kliya koyla ka dhuwan dein.
-Thanda ker lein & side per rakh dein.
Prepare Green Chutney:
-Jug mein hara dhania,podina,lehsan,zeera,hari mirchein,namak,pani aur lemon juice dal ker ache tarhan blend ker lein & side per rakh dein.
Prepare Crispy Tandoori Pakoray:
-Bowl mein pyaz,gajar,band gobhi,aloo,hara pyaz,hari mirch,hara dhania,adrek lehsan paste,tandoori masala,baking soda,zeera,namak aur sabut dhania dal ker ache tarhan mix ker lein.
-Baisan dal ker ache tarhan mix karein.
-Thora thora ker ka pani shamil karein aur mix kertay jayein.
-Karahi mein cooking oil garam karein aur darmiyani ancch per golden & crispy ho janay tak fry ker lein.
Assembling:
-Fried pakoray per dahi,tayyar spicy tandoori chutney,hari chutney,nimco sev,mong phali aur lal mirch crushed dal ker serve karein.
