Crispy Pork, a traditional Chinese New Year dish

Crispy Pork is one of the traditional Chinese New Year dishes from my hometown Sichuan, which symbolizes good luck. Happy Lunar New Year!

Ingredients:
12 oz pork loin (pork belly or shoulder)
8 slices ginger
2 green onions
light soy sauce
Shaoxing cooking wine (optional)
Sichuan pepper powder
white pepper powder
2 eggs
3 to 4 tbsp flour
2 to 3 tbsp corn starch
salt
canola oil or corn oil
