Crispy & Flaky Scallion Pancakes! 葱油饼 | The Chinese Cuisine

These scallion pancakes are are made with eggs for richer flavor and a beautiful golden hue. They are crispy, flaky, and extremely flavorful!

INGREDIENTS:
- 250g all purpose flour + 50g whole wheat flour
- 4 stalks green onions
- 2 large eggs
- 100 ml milk
- 1/4 tsp salt (~2 pinches)
- 60 ml olive oil
- sichuan pepper powder

DIRECTIONS:
1. add some sichuan pepper powder and the salt to the flour
2. add the milk into the eggs and whisk
3. combine the egg and milk mixture with the flour
4. mix until it forms a dough and then knead, adding a little bit of flour if it sticks to your hands
5. let the dough rest for 1 hour
6. meanwhile, chop the scallions into small pieces as shown
7. after 1 hour, roll out the dough into a large, thin sheet
8. cover it evenly in olive oil as shown, as well as the chopped scallions
9. roll the sheet of dough up and divide into 4 pieces of equal size
10. twist the ends closed and flatten into a circular shape
11. roll out each pancake until it is flat (about half a centimeter thick)
12. add oil to pan on low heat
13. put the pancake in the pan for about 10 seconds, then flip so the oil gets on both sides
14. cover the pan with a lid
15. cook each pancake for about 3 minutes, flipping it about once per minute. or cook until each side if golden brown.
16. serve and enjoy!
