INGREDIENTS

Mala spice seasoning
1 tbsp Sichuan peppercorns
1 tsp sweet paprika
1 tsp cumin seeds
1 tsp coriander seeds

Fried Mushrooms
8 oz. (227 grams) enoki mushrooms
5 tbsp (40 grams) cornstarch
1/2 cup (60 grams) all-purpose flour
1/2 tsp (2 grams) baking powder
1/2 tsp (3 grams) kosher salt
1/4 tsp white pepper
1/4 tsp garlic powder
3/4 cup (180 milliliters) water
Vegetable oil or neutral oil, for frying
1/2 tsp (3 grams) fine sea salt, for seasoning
Ketchup, Japanese mayonnaise, or sweet Thai chile sauce, for serving (optional)
