Crispy Bhaji / Pakoda | Recipe by Archana | Kanda, Batata | Quick Veg Starter / Snack in Marathi | Ruchkar Mejwani

The season of monsoon calls for bhaji / pakodas. Learn how to make crispy Onion, Potatoes, Cabbage & Mirchi bhajiya at home from our chef Archana. These quick pakodas are great with hot cup of tea and are even better as vegetarian starters.

Ingredients: (no specific measurements)

Onions, chopped
Cabbage (Kobi), chopped
Potatoes, chopped
Big Red Chillies, chopped
Gram Flour
Mix Masala
Turmeric Powder
Coriander Leaves
Salt to taste
Water
Oil for frying

Method:

To make Kanda Bhaji / Onion Fritters
- In a bowl take chopped onion. Add mix masala, turmeric powder, salt, coriander leaves & little water.
- Coat the chopped onion with all the masala and keep ready for frying.
- In hot oil, fry the bhaji till golden brown.

To Make Kobi chi Bhaji / Cabbage Fritters
- In a bowl take chopped cabbage. Add mix masala, turmeric powder, salt, coriander leaves & little water.
- Coat the chopped cabbage with the masala and keep ready for frying.
- In hot oil, fry the bhaji till golden brown.

To Make Batata Bhaji / Potato Fritters
- To make the batter, in a bowl take gram flour. Add mix masala, salt, turmeric powder, water and coriander leaves. Mix everything well.
- The batter should be of pouring consistency.
- Dip the chopped potatoes in the batter and fry till the potato is cooked.

To make Mirchi Bhaji / Big Green Chillies Fritters
- Slit the chillies & remove seeds to bring down the acidity.
- In the same batter of batata bhaji, dip the green chillies.
- Fry them in hot oil till golden colour.
