Corn Pulao

What would a meal be without a rice dish! this pulao is loaded with yummy sweet corn kernels, and is undoubtedly a favourite with young and old alike.

Preparation Time: 10 minutes
Cooking Time: 8 minutes
Makes 4 servings

Ingredients

For The Rice
2 1/2 cups soaked and cooked rice (chawal)
1 tbsp butter
salt to taste
1/2 cup milk

For The Corn Mixture
1 1/2 cups of boiled sweet corn kernels (makai ke dane)
1 tbsp oil
1/2 tsp cumin seeds (jeera)
1 tbsp chopped green chillies
1/2 cup finely chopped onions
salt to taste

Other Ingredients
oil for greasing

For The Garnish
1 tbsp finely chopped coriander (dhania)

Method

For the rice
1.Heat the butter in a broad non-stick pan, add the rice and sauté on a medium flame for 1 to 2 minutes.
2.Add the salt and milk, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.

For the corn mixture
1. Heat the oil in a broad non-stick pan and add the cumin seeds.
2. When the seeds crackle, add the green chillies and onions, mix well and sauté on a medium flame for 1 to 2 minutes.
3. Add the sweet corn and salt, mix well and sauté on a medium flame for 1 to 2 minutes. Keep aside.

How to proceed
1. Grease a microwave safe bowl with a little oil.
2. Spread the corn mixture evenly at the bottom of a greased bowl.
3. Spread the rice evenly on top and press well.
4. Just before serving, microwave on high for 2 to 3 minutes and invert on a plate.
5. Serve hot garnished with coriander.
