CIGAR PASTRY; CHEESE FILLED CRUNCHY BITES

FULL RECIPE FOR CIGAR PASTRY
For shaping:
3 (~600 g) fresh phyllos
cup water

For the stuffing:
1 egg
125 g goat cheese
50 g chechil cheese (or mozzarella)
bunch of parsley

For cooking:
1 cup sunflower oil

Directions:

THE STUFFING
Wash, dry, and chop the parsley. Then place in a large bowl.
Dice the checil cheese and add into the bowl.
Add 125 g goat cheese into the bowl.
Add the egg and mix the ingredients thoroughly.
Set the stuffing aside.

NOTE: You can also use potatoes or ground beef as stuffing.
For a potato stuffing: boil two potatoes; puree them; season with salt and pepper.
For a ground beef stuffing: grate an onion; combine with ground beef; season with salt and pepper.

CUT THE PHYLLOS
Place a circular phyllo on a countertop. First, fold the phyllo in half. Then fold once more to obtain 4 layers in the phyllo.
Then, cut the folded phyllo into 16 equal triangles.
Place the triangles onto a large plate.
Repeat this process for the other two phyllos.

SHAPING
Pour cup of water into a small bowl.
Set up a working area to prepare the pastries. A large and flat plate or a clean countertop works perfectly for this.
Place a triangle phyllo on a flat surface.
Place a tbsp of stuffing along the base of the phyllo, fold the sides inward and roll up to form a cigar-shaped pastry.
Dip the tip of the phyllo into the water so the pastry does not become undone during cooking.
Arrange the pastries snuggly onto a wide plate in an orderly fashion to preserve their good form.

COOKING
Preheat the sunflower oil in a large frying pan.
Then, lower the heat to medium.
Place the cigar pastries into the frying pan and fry for 2 minutes, or until all sides of the pastries turn golden.
Take the cigar pastries out of the oil and place them on a paper towel to remove the excess oil.
Then, place the cigar pastries onto a serving plate.

SERVING
Cigar-shaped pastries should be served while they are still warm and crunchy.
You can prepare and keep a large amount of cigar pastries in the refrigerator for a couple of days. However, you should cook small portions at a time, right before serving for the best results.

Serve the CIGAR PASTRIES with a cup of tea or coffee, as an appetiser, or as the hidden treasure of a breakfast banquet.
