FULL RECIPE FOR CIGAR PASTRYFor shaping:3 (~600 g) fresh phyllos cup waterFor the stuffing:1 egg125 g goat cheese50 g chechil cheese (or mozzarella) bunch of parsleyFor cooking:1 cup sunflower oilDirections:THE STUFFINGWash, dry, and chop the parsley. Then place in a large bowl.Dice the checil cheese and add into the bowl.Add 125 g goat cheese into the bowl.Add the egg and mix the ingredients thoroughly.Set the stuffing aside.NOTE: You can also use potatoes or ground beef as stuffing. For a potato stuffing: boil two potatoes; puree them; season with salt and pepper.For a ground beef stuffing: grate an onion; combine with ground beef; season with salt and pepper.CUT THE PHYLLOSPlace a circular phyllo on a countertop. First, fold the phyllo in half. Then fold once more to obtain 4 layers in the phyllo.Then, cut the folded phyllo into 16 equal triangles.Place the triangles onto a large plate.Repeat this process for the other two phyllos.SHAPINGPour cup of water into a small bowl.Set up a working area to prepare the pastries. A large and flat plate or a clean countertop works perfectly for this.Place a triangle phyllo on a flat surface. Place a tbsp of stuffing along the base of the phyllo, fold the sides inward and roll up to form a cigar-shaped pastry.Dip the tip of the phyllo into the water so the pastry does not become undone during cooking.Arrange the pastries snuggly onto a wide plate in an orderly fashion to preserve their good form. COOKINGPreheat the sunflower oil in a large frying pan.Then, lower the heat to medium.Place the cigar pastries into the frying pan and fry for 2 minutes, or until all sides of the pastries turn golden.Take the cigar pastries out of the oil and place them on a paper towel to remove the excess oil.Then, place the cigar pastries onto a serving plate.SERVINGCigar-shaped pastries should be served while they are still warm and crunchy.You can prepare and keep a large amount of cigar pastries in the refrigerator for a couple of days.
