Chirimen Jyako and Shiso Pasta

Shiso leaves are a summer favorite with plenty of antioxidants and antibacterial benefits to fight the summer heat! Shiso leaves are often used in Traditional Chinese Medicine for its many medicinal benefits including calming anxiety, insomnia, and mood imbalance. It is also full of vitamin e, vitamin c, and calcium to boost the immune system.

RECIPE: 1-2 servings

2 cups pasta or pasta for two (choose your fav)
5-6 green shiso leaves
0.5 - 1 oz chirimen jyako or "jyako" (tiny salted dried anchovies*)
1 clove garlic
1 tablespoon ponzu
Pinch of red chili flakes
Few cranks of freshly ground pepper
1/2 sheet nori (you may also buy pre shredded nori)
Oil for cooking ( I used evoo)

*Dried anchovies are easily found in Japanese and Korean Asian markets. The umami flavor is seriously addictive:)

1. Boil pasta according to package.
2. While pasta is boiling, thinly shred shiso leaves and mince garlic.
3. Drain pasta.
4. Heat pan to med heat.
5. Add oil.
5. Add garlic and let it sit for a few minutes to flavor the oil.
6. Just before the garlic turns color, add jyako, red chili flakes and sauted.
7. Once everything starts to sizzle, add pasta.
8. Add pepper.
9. Add ponzu.
10. Toss everything together, turn off heat, then add the shiso leaves. Toss.
11. Plate. Garnish with nori .
12. Enjoy!! Itadakimasu
