Chilli Pineapple Grilled Chicken | Sanjeev Kapoor Khazana

Chicken pieces marinates with fresh cut red chillies and pineapple juice, grilled to perfection.

CHILLI PINEAPPLE GRILLED CHICKEN

Ingredients

2 boneless chicken breasts
1-2 fresh red chillies, finely chopped
¼ cup pineapple juice
Salt to taste
Black pepper powder to taste
1 tablespoon chopped garlic
2 teaspoons butter
½ cup chopped mixed vegetables (yellow capsicum, red capsicum and broccoli florets)

Method

1. Preheat oven to 180˚ C.
2. Place chicken breasts on a plate. Add salt and pepper powder and rub. Add red chillies and garlic and rub again. Add pineapple juice, rub well and set aside to marinate for 5 minutes.
3. Heat butter in a non-stick grill pan. Place the grilled chicken breasts reserving the marinade and sear from both sides till golden brown. Place on a baking tray.
4. Put the tray into the preheated oven and bake for 5-10 minutes. Remove from oven.
5. Heat the reserved marinade in the same non-stick pan. Add the mixed vegetables and grill till golden brown.
6. Serve hot with the grilled vegetables.
