This soup is absolutely delicious and is undoubtedly loaded with nutritious ingredients and aromatic flavors of basil. Ingredients:1 tbsp. butter2 cloves chopped garlic2 medium potatoes - peeled & cut Into pieces1/4 cup fresh basil2 cups water2 tbsp. cashew nuts - ground1tsp. lime juicesalt & pepper to tasteMethod:- In a pressure cooker, heat the butter and add the chopped cloves of garlic and stir well.- Add the potatoes and few basil leaves and stir well.- Add the water and close the lid of the pressure cooker.- Wait for 2-3 whistles so that the potatoes are well cooked. - Open the lid and then using a hand blender, blend all the ingredients well.- Add the powdered cashew nuts, salt, pepper and lemon juice and mix it well.- Tear in few basil leaves on the top.- Pour the soup in a bowl and keep it in the refrigerator to cool down. - Serve chilled.
