Chicken wrapped in puff pastry paranthas sandwiched between a mushroom-y & cheesy mixture, then baked till perfection. Doesn't it sound like the perfect recipe to turn your Christmas menus merrier?

CHICKEN WELLINGTON

Ingredients

4 chicken breasts
8 puff pastry parantha
2 tbsps olive oil
1½ tbsps finely chopped garlic
1 medium onion, finely chopped
4-5 button mushrooms, chopped
2-3 dried shitaki, soaked, drained and chopped
5-6 shitake mushrooms, chopped
4-5 shimeji mushrooms, chopped
½ bundle of enoki, chopped
Crushed black peppercorns to taste
Salt to taste
2 cups shredded spinach leaves
½ cup feta cheese
Egg wash as required
White sesame seeds for sprinkling
Black sesame seeds for sprinkling
Baked potatoes to serve
Brown sauce to serve

Method

1. Preheat the oven at 180ºC.
2. Heat1 tbsp olive oil in a non-stick pan. Add garlic and onion and sauté for 1 minute.
3. Add button mushrooms, dried shitake, fresh shitaki, shimeji, enoki and crushed black peppercorns and mix well. Cook for 1-2 minutes.
4. Add salt and spinach leaves and mix well. Cook for 1 minute. Switch the heat off, add feta cheese, mix and set aside to cool to room temperature.
5. Take chicken breasts on a plate, sprinkle salt, crushed black peppercorns and remaining olive oil and mix well. Set aside for 20 minutes.
6. To make the chicken wellington, take a puff pastry parantha, place a portion of the mushroom mixture and spread it lightly. Place a chicken breast over it and apply some more of the mushroom mixture. Place another puff pastry parantha on top, press the edges of the parantha overlapping the chicken. Make cuts on the opposite edges on 2 sides without cutting through. Brush with some beaten eggs and bring in the strips over the chicken, making a braid pattern. Seal the edges. Similarly, prepare the remaining wellingtons. Transfer these on to a greased baking tray. Brush some egg wash on top, sprinkle white sesame seeds and black sesame seeds.
7. Place the baking tray in the preheated oven and bake for 15-20 minutes.
8. Remove the baking tray and serve hot with baked potatoes and brown sauce.
