Chicken Pickle | Indian Mom's Kitchen

This is an ideal dish for those who are short of time for cooking after a day's work in the office. Mothers can send it along with their children who are staying in hostels and wives can send it along with their husbands working abroad so that they can also enjoy a nutritious meal away from home. Here is how you can easily prepare it at home.

Ingredients:
1/2 kg boneless Chicken cut into small pieces
1/4 tsp Turmeric powder
1 tsp Pepper powder
3/4 tsp Garam masala
1 cup Oil
1 tsp Mustard seeds
1/4 tsp Fenugreek seeds
1 tsp Fennel
15 thinly sliced Garlic pods
2 inch Ginger thinly sliced
3 chopped Green Chillies
3 chopped dry Red Chillies
1/4 tsp Hing
21/2 tsp Kashmiri Chilli powder
1/4 cup Vinegar/Lime juice
Curry leaves
Salt to taste

Method: Marinate Chicken pieces with Pepper powder, turmeric powder, Garam masala and Salt. Refrigerate for an hour.
Heat 1 cup Oil and fry the marinated Chicken in small batches till crisp and brown. Remove the Chicken pieces from Oil and keep aside.
In the remaining Oil splutter Mustard seeds, Fenugreek seeds and Fennel. Add the Garlic, Ginger, Green Chillies, Red Chillies, Curry leaves and fry till the Garlic turns brown.
Put in the Hing, Kashmiri Chilli powder and Salt and saute for a minute. Then add the fried Chicken and saute for 2 minutes. Finally, add Vinegar/Lime juice and mix well. Remove from fire and cool before serving.
