Panini Sandwich
Recipe in English:

Ingredients:
Prepare Panini Bread:
-Sugar 1 tbs
-Khameer (Instant yeast) 2 tsp
-Warm water Cup
-Safed chakki atta (White chakki flour) 300g
-Namak (Salt) tsp
-Water Cup or as required
-Makhan (Butter) 2 tbs
-Makhan (Butter)
Prepare Chicken Stuffing:
-Dahi (Yogurt) whisked 3 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Cream 3 tbs
-Lal mirch powder (Red chilli powder) tbs or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Namak (Salt) 1 tsp or to taste
-Garam masala powder tsp
-Lemon juice 2 tbs
-Chicken boneless strips 500g
-Cooking oil 2-3 tbs
-Shimla mirch (Capsicum) julienne 1 Cup
-Red bell pepper julienne 1 Cup
-Pyaz (Onion) sliced 1 Cup
Assembling:
-Mayonnaise
-Tomato ketchup
-Mozzarella cheese slices
-Cheddar cheese grated
-Tomato ketchup
-Makhan (Butter)

Directions:
Prepare Panini Bread:
-In a small jug,add sugar,instant yeast and warm water,mix well,cover & let it rest for 10-12 minutes.
-In a bowl,add yeast mixture,gradually add white chakki flour & mix well for 4-5 minutes then add remaining white chakki flour,salt & mix well.
-Gradually add water & knead until dough is formed.
-Add butter & mix well.
-Grease dough with butter,cover & let it proof for 1 hour.
Prepare Chicken Filling:
-In a bowl,add yogurt,ginger garlic paste,cream,red chilli powder,cumin seeds,red chilli crushed, salt,garam masala powder,lemon juice & mix well.
-Add chicken and mix well,cover & marinate for 15 minutes.
-In frying pan,add cooking oil,marinated chicken & cook on medium flame until dries up & oil separates (14-15 minutes).
-Add capsicum,red bell pepper and onion,mix well and cook for a minute & set aside.
-Place dough on working surface,sprinkle dry flour & knead again until smooth.
-Divide the dough into 4 portions (each 140g).
-Take a portion & make a ball,sprinkle dry flour & roll out in oval shape with the help of rolling pin.
-Cover them with kitchen cloth for 15 minutes (makes 4).
-Heat thick bottom frying pan,place panini bread,cover & cook on low flame for 5-6 minutes (each side) & let it cool.
-Cut panini bread from the center.
-Add mayonnaise,tomato ketchup,mozzarella cheese slices,prepared stuffing,cheddar cheese,tomato ketchup & cover with another bread slice.
-Grease grill pan with butter,place panini sandwich & toast on medium flame from both sides (5-6 minutes) & serve!

Prepare Panini Bread:
-Chotay jug mein cheeni,khameer aur neem garam pani dal ker ache tarhan mix karein aur dhak ker 10-12 minutes kliya rakh dein.
-Bowl mein khameer mixture aur thora thora ker ka safed chakki atta shamil karein aur 4-5 minutes kliya ache tarhan mix ker lein phir baqi bacha huwa atta aur namak dal ker ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
-Makhan dal ker ache tarhan mix ker lein.
-Dough ko makhan sa grease karein aur dhak ker 1 hour proof hunay kliya rakh dein.
Prepare Chicken Filling:
-Bowl mein dahi,adrak lehsan paste,cream,lal mirch powder,zeera,lal mirch crushed,namak,garam masala powder aur lemon juice dal ker ache tarhan mix ker lein.
-Chicken dal ker ache tarhan mix karein aur 15 minute kliya marinate ker lein.
-Frying pan mein cooking oil aur marinated chicken dal dein aur darmiyani ancch per sukh janay aur oil alag ho janay tak paka lein (14-15 minutes).
-Shimla mirch,red bell pepper aur pyaz dal ker ache tarhan mix karein aur ek minute kliya paka lein & side per rakh dein.
-Dough ko working surface per rakh dein aur atta chirak ker dough smooth hunay tak dubara ghond lein.
-Dough ko 4 hisson mein divide ker lein (each 140g).
-Ek portion lein aur ball bana lein,atta chirak dein aur rolling pin ki madad sa oval shape mein bail lein.
-Kitchen towel sa dhak ker 15 minute kliya chor dein (makes 4).
-Thick bottom frying pan ko garam karein aur panini bread rakh ker dhak dein aur halki ancch per 5-6 minutes kliya paka lein (each side) & thanda ker lein.
-Panini bread ko center mein sa cut ker lein.
-Mayonnaise,tomato ketchup,mozzarella cheese slices,tayyar stuffing,cheddar cheese aur tomato ketchup dal ker upper sa ek aur bread slice rakh dein.
-Grill pan ko makhan sa grease karein aur panini sandwich rakh dein aur darmiyani ancch per dono sides sa toast ker lein (5-6 minutes) & serve karein!
