Ingredients for dough:
All-purpose flour 3 cup
Salt 1/2 tsp
Butter (soft) 3/4 cup
Egg 1
Cold water for kneading
Egg (beaten) for brushing
Ingredients for filling:
K&N’s Fajita Toppingz n Fillingz as required
Olive oil 1 tbsp
Garlic (minced) 1 tsp
Onion (sliced) 1/2 cup
Carrot (julienne) 1/2 cup
Green capsicum (julienne) 1/2 cup
Salt to taste
Black pepper 1/2 tsp
Ingredients for sauce:
Tomatoes 2
Green chilies 2-3
Garlic cloves 2-3
Salt to taste
Cumin seeds (roasted) 1 tsp
Black pepper 1/4 tsp
Lemon juice 1 tsp
Directions:
In a bowl mix flour, salt, egg and butter. Gradually add water until dough forms.
Take out dough out on a lightly floured surface and knead for 7 to 8 minutes at least or until smooth. Wrap it with a cling and let it rest in refrigerator for at least one hour. Your dough is ready.
For vegetable filling heat oil in a wok, and sauté garlic in it for a minute. Add onion, carrot, capsicum, salt, black pepper and stir fry on high flame for 1 to 2 minutes. Your veggie filling is ready set aside.
For sauce roast tomatoes and green chilies on a grill pan for 2 to 3 minutes on medium flame. Let it cool down a bit.
Then in a grinder add roasted tomatoes, green chilies, garlic cloves, salt, cumin seeds, black pepper and lemon juice and grind until you get a chunky paste and your sauce is ready to serve.
Take dough and divide it into two equal parts and roll out one part into a big sheet. Take a bowl and cut two big circles.
Prepare K&N’s Fajita Toppingz n Fillingz as per the instructions on the pack. Set aside.
Fill half of the circle with prepared K&N’s Fajita Toppingz n Fillingz and stir-fried veggies. Fold it in half giving it a moon or semi-circle shape. Gently press the edges to seal it.
Method 1: heat oil in a deep pan and fry empanadas in it until golden brown on medium flame for 5 to 8 minutes.
Method 2: preheat your oven, place empanadas on a baking tray. Brush them with egg and bake it at 180 degrees for 10 to 15 minutes or until golden brown.
Serve delicious chicken fajita empanadas with sauce and enjoy.
