Ingredients for Chelo Kabab:
Beef mince + fat 800 g + 200 g
Onion (grated) 1 cup
Egg 1
Turmeric powder 1 tsp
Coriander powder 1 ½ tsp
Amchoor powder 1 tsp
Salt 1 tsp
Red chili flakes 2 tsp
Black pepper powder 1 tsp
Garlic paste 1 tbsp
Baking soda 1 tsp
Lemon juice 1 tbsp
Sumac (optional) 1/2 tsp
Oil 2 tbsp

Ingredients for Saffron Rice:
Saffron + water 1 tbsp + 1 tbsp
Guard Basmati Rice 2 cups
Water (for soaking) as required
Water (For boiling) as required
Cinnamon stick 1 inch
Green cardamom 3
Bay leaves 2-3
Star anise 2
Cloves 8-10
Butter 2 tbsp
Salt 1 tsp
Oil 1 tbsp
Cashew nuts 1/4 cup
Green coriander (for garnishing)
Ingredients for Grilled Vegetables:
Green chilies (long) as required
Tomatoes (half cut) as required
Onion (half cut) as required

Directions for Chelo Kabab Preparation:
1. In a bowl add beef mince, fat. Onion, egg, turmeric, coriander powder, amchoor powder, salt, red chili flakes, black pepper powder, garlic paste, baking soda, lemon juice, sumac, oil and mix well.
Note: You can add mixture of amchoor powder and coriander powder instead of sumac as well.
2. Refrigerate the mixture for 1 hour. Now take the BBQ Skewers, place the prepared kabab mixture on it and make the long kabab shape.
3. Grill the prepared kabab skewers until they are light golden in color. Brush with oil while grilling. Set aside.
Directions for Saffron Rice Preparation:
4. Add Guard Basmati Rice and water in a bowl. Soak for 25-30 minutes.
5. In a pot add water, salt, oil, cinnamon stick, green cardamom, bay leaf, star anise, cloves and bring the water to boil.
6. Now add soaked rice and boil until 85% done. Now strain and save half of the rice for later use.
7. Now in another pot, heat butter and add cashew nuts, cook for 1-2 minutes, now add saffron water and mix well. Now add half of the boiled rice, mix well until even in color. Set side.
Directions for Grilled Vegetables:
8. Place the veggies on BBQ Skewers and grill them for 2-3 minutes. Serve with Saffron Rice and Chelo Kabab.

Cooking time: 30-40 mins
Serving: 3-4
