In this cheese Corn Sandwich, lightly buttered bread plays host to the cheesy, delectable mixture inside!

CHEESE CORN SANCDWICH

Ingredients

8 brown bread slices
¼ cup grated processed cheese + for garnishing
1 tablespoon butter + as required
1 tablespoon refined flour (maida)
1 cup milk
½ teaspoon dried oregano
½ teaspoon red chilli flakes
2-3 tablespoons finely chopped mixed capsicums (red, yellow and green)
2-3 tablespoons boiled corn kernels

Method

1. Heat 1 tablespoon butter in a non-stick pan. Add flour and sauté for 1 minute.
2. Add milk, mix continuously and cook till the mixture slightly thickens. Add salt, dried oregano and chilli flakes and mix well.
3. Add ¼ cup cheese, mixed capsicums and corn kernels, mix and cook till the mixture thickens. Transfer in a bowl and refrigerate to cool.
4. Cut bread slices into roundels using a large size cookie cutter.
5. Spread some white sauce mixture on half of bread roundels and cover with remaining bread roundels.
6. Heat an electric grill toaster and grease it with some butter. Place the prepared sandwiches, brush some butter on top, cover and toast till golden brown from both sides.
7. Serve hot garnished with some cheese.
