Century Egg Tofu (皮蛋豆腐) | The Chinese Cuisine

This pairing makes for an easy, delicious dish that can be made in under ten minutes!

INGREDIENTS:
- chinkiang vinegar
- soy sauce
- sesame oil
- 1 preserved duck egg (century egg)
- 1/3 block tofu (silken tofu recommended)
- a few drops of ginger juice

DIRECTIONS:
1. combine soy sauce and a bit of chinkiang vinegar
2. grate 1 tsp of ginger for a few drops of juice (remember to peel the skin first)
3. cube the tofu
4. slice or dice the egg
5. drizzle the sauce on top, along with some sesame oil. mix everything up if preferred
6. serve and enjoy!
