Bun Parotta Recipe
Ingredients for Dough:
All-purpose flour 3 cups
Egg 1
Milk 1 cup
Salt 1 tsp
Sugar 1 tsp
Oil 2 tbsp
Oil (for greasing) as required
Damp cloth
Oil (for rolling and frying)

Ingredients for Omelet:
Eggs 3
Salt to taste
Black pepper powder 1/2 tsp
Mixed herbs 1/4 tsp
Red chili flakes 1/2 tsp
Milk 2 tbsp
Onion (chopped) 1/4 cup
Green capsicum (chopped) 1/4 cup
Red bell pepper (chopped) 1/4 cup
Tomatoes (chopped) 1/4 cup
Green onion (chopped) 1/4 cup
Oil 2-3 tbsp

Directions for Dough Preparation:
1. In a bowl, add flour, egg, salt, sugar and mix well. Gradually add milk until all the well incorporated. Knead for 15 minutes or until the dough is soft and stretchy.
2. Add 1 tbsp of oil on top of dough to prevent it from drying. Cover the bowl with damp cloth.
3. Rest the dough for minimum 2 and maximum 5 hours.
4. Now cut the dough in 4 halves. Make the balls and add 2 tbsp of oil on the dough balls. Rest them for another 30 minutes with damp cloth.
5. Now take a dough ball and flatten it with rolling pin as thin as possible in a large circle sheet. Apply oil on the sheet.
6. Fold the dough vertically and roll it sidewise. Turn the dough sideways to make it spiraled and about 3 inches in height.
7. Gently flatten the dough using your palms into a 4-inch circle.
8. Add some oil on the griddle, place the gently flattened parotta and cook each side on medium high flame for 2 minutes. Take off flame and set aside.
9. Take off flame and tap on the side of the parotta to fluff it up and to resemble a bun.
Directions for Omelet Preparation:
10. In a bowl add eggs, salt, black pepper powder, red chili flakes, mixed herbs, milk and whisk until well combined.
11. Now heat oil in a pan, add chopped onion, tomatoes, red and green capsicum, green onion and saute for 2-3 minutes. Add egg mixture, scramble and cook over medium low flame until fully cooked.
12. Sprinkle green onion on top and serve with bun parotta.
Preparation time: 40 mins
Cooking time: 20 mins
Serving: 2-3
