Bun French Toast with Onion & Tomato | Cook Smart | Sanjeev Kapoor Khazana

Buns dipped in egg and toasted and served with onion-tomato chutney

BUN FRENCH TOAST WITH ONION AND TOMATO

Ingredients

2 buns
3 eggs
1 large onion
1 medium tomato
4 tbsps oil
Salt to taste
2-3 sprigs fresh coriander leaves
½ tsp red chilli powder
2 tbsps tomato ketchup
1 tsp red chilli sauce
1 stalk spring onion greens, cut into thin strips

Method

1. Heat 2 tbsps oil in each of 2 non-stick pans.
2. Slice onion and add to one pan. Chop tomato roughly.
3. Break eggs into a bowl, add salt and whisk well. Chop coriander leaves and add and mix. Add ¼ tsp red chilli powder and mix.
4. Halve buns and soak them in the egg mixture and cook them in the 2nd pan.
5. Add tomato to the onions when they turn golden and mix. Add tomato ketchup and mix. Add salt, ¼ tsp red chilli powder and red chilli sauce and mix well. Cook till tomato turns soft.
6. Flip the bun halves and cook on the other side too.
7. Place the bun halves on serving plates, spread the onion-tomato chutney over them.
8. Garnish with spring onion green strips and serve hot immediately.
