Brown Rice Biryani
Serves 4-5
Recipe in English:

Ingredients:
-Water as required
-Namak (Salt) 1 tbs or to taste
-Falak Organic Brown Basmati rice 500g
-Tamatar (Tomatoes) sliced 3 medium
-Pyaz (Onion) fried Cup
-Podina (Mint leaves) chopped 1 Cup
-Hara dhania (Fresh coriander) chopped 1 Cup
-Aloo bukhara (Dried plums) 8-10
-Hari mirch (Green chillies) 3-4
-Zeera (Cumin seeds) roasted & crushed tbs
-Lemon juice 1 tbs
-Water 500ml
-Chicken mix boti 500g
-Lal mirch powder (Red chilli powder) tbs or to taste
-Dhania powder (Coriander powder) 1 tbs
-Haldi powder (Turmeric powder) tsp
-Namak (Salt) 1 tsp or to taste
-Garam masala powder 1 tsp
-Javitri powder (Mace powder) tsp
-Jaifil powder (Nutmeg powder) tsp
-Chicken powder 2 tbs
-Sabut kali mirch (Black peppercorns) tsp
-Badi elaichi (Black cardamom) 1
-Zeera (Cumin seeds) 1 tsp
-Laung (Cloves) 3-4
-Tez paat (Bay leaf) 1
-Darchini (Cinnamon sticks) 2
-Badiyan ka phool (Star anise) 1
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Olive oil 3 tbs
-Kewra water 1 tbs
-Zarda ka rang (Yellow food color) tsp

Directions:
-In a bowl,add brown rice,water,wash thoroughly and soaked for 30-40 minutes then strain soaked rice & set aside.
-In pot,add water and heat it.
-Add salt and bring it to boil.
-Add soaked brown rice,mix well & cook on high flame for 10 minutes then 10 minutes on medium low flame until 3/4th done then strain & set aside.
-In a bowl,add tomatoes,fried onion,mint leaves,fresh coriander,dried plums,green chillies,cumin seeds, lemon juice,mix well & set aside.
-In a pot,add water,chicken mix boti,red chilli powder,coriander powder,turmeric powder,salt,garam masala powder,mace powder,nutmeg powder,chicken powder,black peppercorns,black cardamom, cumin seeds,cloves,bay leaf,cinnamon sticks,star anise,ginger garlic paste,olive oil,mix well & bring it to boil,cover partially & cook on medium flame for 10 minutes then cook on high flame approx. 1 cup water is left.
-Now add tomatoes & onion mixture,kewra water,yellow food color,boiled brown rice,cover & simmer on low flame for 15-20 minutes.
-Serve with salad & yogurt raita!

Directions:
-Bowl mein brown rice aur pani dal ker thoroughly wash ker lein aur 30-40 minutes kliya bhego dein phir soaked chawal ko strain ker lein & side per rakh dein.
-Pot mein pani dal ker garam karein.
-Namak dal dein aur ubal anay dein.
-Soaked brown rice dal ker ache tarhan mix karein aur tez ancch per 10 minutes phir darmiyani halki ancch per th done hunay tak 10 minutes kliya paka lein phir strain ker ka side per rakh dein.
-Bowl mein tamatar,fried pyaz,podina,hara dhania,aloo Bukhara,hari mirchein,zeera aur lemon juice dal ker ache tarhan mix karein & side per rakh dein.
-Pot mein pani,chicken mix boti,lal mirch powder,dhania powder,haldi powder,namak,garam masala powder,javitri powder,jaifil powder,chicken powder,sabut kali mirch,badi elaichi,zeera,laung,tez paat, darchini,badiyan ka phool,adrak lehsan paste aur olive oil dal ker ache tarhan mix karein aur ubal anay ka bad partially dhak dein aur darmiyani ancch per 10 minutes kliya paka lein phir tez ancch per 1 cup pani reh janay tak paka lein.
-Ab tamatar & pyaz mixture,kewra water,zarda ka rang aur boiled brown rice dal ker dhak dein aur halki ancch per 15-20 minutes kliya dum per rakh dein.
-Salad & dahi ka raita ka saath serve karein!
