Braised Noodles with Green Beans (豆角焖面) | The Chinese Cuisine

Made with our homemade noodles, this dish is especially fresh and delicious. Braising allows time for the noodles to soak in all the flavors.

What makes this dish special are its steamed noodles which have more of a bite to them than boiled noodles.

INGREDIENTS (4 servings)
- ~620g (~21.8 oz) homemade noodles: https://youtu.be/j4n_OgcXOnE
- 300g ground pork
- 500g green beans, cut into short pieces
- 3 cloves garlic, minced
- 10g ginger, sliced into thin strips
- 1 stalk green onion, sliced
- 20 ml cooking wine
- 10 ml soy sauce
- 5 ml Chinkiang vinegar
- 2 tsp. sugar
- 1/2 tbsp. salt
- water

DIRECTIONS:
1. steam noodles for 15 minutes.
2. place noodles in cool water for 2 minutes
3. remove noodles from water put in strainer
4. add oil to pan on low-med heat
5. fry ginger strips until golden brown. halfway through, add in green onions.
6. remove ginger strips and green onions once the aroma has been absorbed by the oil. you can discard them or sprinkle on a bit of salt add eat as a side dish/snack.
7. add ground pork to pan and turn up to heat to medium
8. break apart the ground pork and stir fry briefly
9. add in cooking wine, soy sauce, sugar, Chinkiang vinegar, and salt. mix well into the meat.
10. add in the green beans
11. cover and cook green beans on low heat for about 10 minutes.
12. add in 1/3 cup of water and then the cooked noodles
13. cover and cook for an additional 15 minutes
14. stir-fry on high heat until all the liquid evaporates.
15. towards the end, add in minced garlic and mix well.
16. serve and enjoy!
