BORSCHT

Ingredients

500 grams boneless mutton, cut into small pieces
1 large potato, peeled and cut into cubes
½ cup grated carrot
1 medium beetroot, peeled and grated
3 tablespoons shredded cabbage
1 tablespoon oil
1 large onion, finely chopped
4-5 garlic cloves
½ cup tomato puree
Salt to taste
Crushed black peppercorns to taste
1 tablespoon lemon juice
Fresh parsley sprig for garnishing

Method

1. Heat oil in a deep non-stick pan. Add onion and sauté till translucent.
2. Add garlic and mix. Add mutton pieces and mix. Add tomato puree, stir to mix and cook for 2-3 minutes.
3. Add salt and crushed peppercorns and mix. Add sufficient water, mix and bring to a boil.
4. Add potato, carrot, beetroot, cabbage and lemon juice, mix well, cover and cook till mutton and vegetables are fully done.
5. Garnish with parsley sprig and serve hot.
