Prepare this decadent pudding with the ultra-healthy, black rice!

BLACK RICE PUDDING

Ingredients

4 cups milk
2 tbsps black rice, washed, soaked overnight and drained
¾ cup sugar
2 tbsps fried raisins
8-10 pistachios, blanched, peeled and slivered
½ tsp green cardamom powder

Method

1. Heat milk in a non-stick deep pan, let it come to a boil. Add the soaked rice, mix and cook for 30-35 minutes or till the rice is cooked completely. Stirring continuously.
2. Add sugar, mix and cook till it melts.
3. Add fried raisins, pistachios and green cardamom powder and mix well. Cook for 1 minute.
4. Serve warm or cold.
