BLACK-EYED PEA / BRLCE

FULL RECIPE FOR BLACK-EYED PEA

Ingredients

2 cups dry black-eyed peas
4 cups water for pre-cooking
cup olive oil
1 onion
3-4 garlic cloves
1 large tomato
3 cups water for cooking
3-4 small green peppers
tbsp salt
1 tbsp sugar


Directions

PREPARATION & PRE-COOKING
Wash and drain the black-eyed peas
Boil 4 cups of water in a medium-sized pot
Pour the black-eyed peas into the boiling water
Once the water starts to boil again, cook for 5 to 6 minutes
Then drain the boiling water and give the black-eyed peas a quick rinse under cold water, set aside the peas and prepare the vegetables
Peel and wash the onion and cut into small cubes
Peel and wash the garlic cloves and mince
Wash and blanch the tomato to peel it easily, then cut the tomato into small cubes

COOKING
Set the stove to medium heat, pour cup of olive oil into the pot
Add the onion and garlic, stir for 3 to 4 minutes
Afterwards, add the diced tomato, stir for 2 to 3 minutes
Add pre-cooked black-eyed peas
Give a gentle stir to combine the ingredients then add 3 cups of hot water
Cover with a lid, lower the heat and cook for 30-35 minutes
Meanwhile, wash the green peppers, discard the stems and seeds then cut into small pieces
Check the peas after 25 minutes of cooking to see they are tender
Once it is cooked completely, add peppers, tbsp of salt, and 1 tbsp of sugar
Once more, stir the ingredients gently then cover the lid
Simmer for 2 to 3 minutes, turn off the heat

SERVING
Black-eyed pea is a light summer dish when it is cooked with olive oil. You can serve warm with the addition of pilav or as a cold side dish
