Sally is back with a recipe that combines two of our favourite things - brownies and cookies, to make the ultimate BROOKIE! But this isn't just ANY brookie, it's the ultimate birthday brookie! (how many times can we say brookie? Turns out LOADS!).

This bad boy has everything - our fudgey brownie with pockets of caramelised white chocolate, stuffed with a perfect chewy funfetti cookie! We used a 10" square tin for this recipe.

Cookie Dough:
75g Soft Unsalted Butter
100g Light Brown Sugar
45g Caster Sugar
1 Egg
1 Egg Yolk
145g Plain Flour
tsp Salt
tsp Vanilla
40g Sprinkles
100g White Choc Chips

Brownie:
220g Dark Choc
220g Butter
440g Caster Sugar
4 Eggs
60g Cocoa Powder
160g Plain Flour
tsp Baking Powder
tsp Salt
150g Caramelised White Chocolate

165g Dark Choc

120g Plain Flour

112.5g Caramelised White Chocolate
