BHAJA MASALAIngredients4 tbsps cumin seeds2 tsps coriander seeds2 bay leaves4 tbsps fennel seeds (saunf)6-8 green cardamoms3 dried red chilliesMethod 1. Dry roast cumin seeds, coriander seeds and bay leaves in a pan till they turn fragrant. Transfer in a plate and allow to cool.2. Add fennel seeds, green cardamoms and dried red chillies in the same pan and roast till fragrant. Transfer in the same plate and allow to cool.3. Put the roasted spices in a mixer jar and grind to a fine powder. 4. Transfer the masala into a jar. Use as required.
