Beijing Street Food - Shrimp Tapioca Pancake | Travel Thirsty

Here's Beijing's take on the Taiwanese omelette. First a few shrimps are fried up with a freshly cracked egg and made into an omelette. Next tapioca starch is poured over to create a pancake. Lettuce is sometimes added for texture and freshness. Chili sauce is optional and served on the side.
