How to make Banana Bread For Two

What are you going to do with that one over ripe banana on your counter… Here’s your answer, it's a dessert for two, it's a round banana bread. The chopped pecans give this banana bread a great texture, but you could swap them out for walnuts. The yogourt keeps it moist and adds just a little zing.

Ingredients:
½ cup (125 mL) all-purpose flour
¼ cup (60 mL) pecan pieces
½ tsp (2 mL) baking soda
pinch of salt
¼ cup (60 mL) sugar
1 Tbsp (15 mL) butter, melted
1 ripe banana, mashed
1 Tbsp (15 mL) yogourt
½ tsp (2 mL) pure vanilla extract
1 egg

Method:
Preheat oven to 350ºF (180ºC)
Grease a 6 inch round cake pan.
In a bowl whisk together flour, pecans, baking soda, salt, and sugar.
In another bowl whisk together butter, banana, yogourt, vanilla, and egg.
Stir the banana mixture into the flour mixture and transfer to the cake pan.
Smooth the top and bake for about 30 minutes.
Let cake cool for 10-15 minutes before removing from pan.
