We can serve Baingan Masala along with roti or paranthas the best choice for dinner and lunch menus.Masaledar Baigan IngredientsBrinjal - 500 grams small sizeMustard Oil - 2 TbspBesan - 1 TbspFresh coriander leaves finely choppedAjwain - 1/2 tspAmchur powder - 1/2 tspRed chili powder - 1/2 tspCurd - 1 TbspTamato - 2 fresh pureeGinger paste - 1 tspGreen chili - 1A pinch of hingSalt to tasteHaldi powder - 1 tspGaram Masala - 1 TbspMethod Masaledar Baigan :Wash brinjal and slit them on 4 sides without breaking them and keep aside.Take a bowl, add besan, 1/2 tsp salt, 1/2 tsp garam masala and 1/2 tsp haldi powder.Mix well and stuff the baigan.Take a kadai, add oil and heat it.Add ajwain, hing, and stuffed baigan.Fry on medium flame for 2 mins.Cover the lid and cook for 5 mins till tender.After 5 mins take out the baigan.In the same kadai in the left over oil, add ginger paste.Add green chili, haldi powder and tomato puree.Add salt, red chili powder and amchur powder.Mix well and cook for 2 to 3 mins.Add left over masala mix which we have filled in Baigan.Add fresh coriander leaves and garam masala.Add curd and mix well continuously.Add fried Baigan and cover and cook for 2 mins more.Now your masaledar baigan is ready to serve hot.
