Bacon Potato Corn Chowder Recipe - Glen And Friends CookingIngredients:3 slices bacon, chopped1 red bell pepper, chopped1 hot banana pepper, chopped1 onion, chopped750 mL (3 cups) corn5 sprigs thyme2.5 mL ( tsp) tarragon5 mL (1 tsp) summer savourySalt and pepper to taste750 mL (3 cups) chicken broth2-3 potatoes, peeled and dicedBeurre mani to thicken250 mL (1 cup) or so heavy creamMethod:In a heavy bottomed pot, brown the bacon.Then stir in the peppers, onion, and corn; continue frying until the onion has softened.Stir in the herbs, chicken broth, and potatoes; cover and simmer until potatoes are fork tender.Use a potato masher or blender to smooth out / thicken part of the soup.Stir in 1-2 Tbsp Beurre mani to help thicken (if desired).Stir in the cream, cover and cook on a low simmer 20-30 minutes.This summer (June 2023) I'm flying in a 2,086nm fundraiser for Hope Air, an organisation that helps lower income Canadians or those who live in remote areas access healthcare by providing flights (through private pilots and airlines) to larger urban centres.
