Poha, nuts & saffron combined together to prepare this awesome halwa. It gets done in a jiffy!

AVAL KESARI HALWA

Ingredients

1 cup pressed rice (aval/poha)
3 tbsps ghee
2 tbsps raisins
2 tbsps chopped cashew nuts
2 tbsps chopped pistachios + for garnish
A large pinch of saffron, soaked in 1 tbsp warm water
¾ cup sugar
½ tsp green cardamom powder

Method

1. Dry roast pressed rice till crisp in a non-stick pan. Transfer on to a plate and allow to cool slightly.
2. Transfer the roasted pressed rice in a blender jar and blend to a fine powder.
3. Heat 1½ tbsps ghee in another non-stick pan, add raisins and sauté for 1 min or till they puff up. Transfer the raisins on a plate.
4. Add cashew nuts and pistachios in the ghee left in the pan, add cashew nuts and sauté till golden brown. Transfer on to the same plate.
5. Heat 1½ tbsps ghee in the same pan, add the ground pressed rice and sauté till golden brown.
6. Add 2½ cups hot water little by little, stirring continuously till well combined. Cook for 1 min.
7. Add soaked saffron, mix and cook for 1 minute. Add sugar, mix and cook till the sugar melts. Add the fried nuts and raisins and mix well.
8. Add green cardamom powder, mix and cook for a few seconds. Take the pan off the heat.
9. Serve hot garnished with chopped pistachios.
