Atta Nankhatai without Oven
Recipes in English:

Ingredients:
-Chakki ka atta (Whole wheat flour) sifted 1 Cup
-Baisan (Gram flour) Cup
-Sooji (Semolina) 2 tbs
-Elaichi powder (Cardamom powder) tsp
-Jaifil powder (Nutmeg powder) 1/8 tsp
-Baking powder 1 tsp
-Namak (Salt) 1 pinch
-Baking soda tsp
-Ghee Cup
-Powdered Sugar Cup
-Dahi (Yogurt) whisked tbs
-Anday ki zardi (Egg yolk) whisked 1
-Badam (Almonds) chopped

Directions:
-In a frying pan,add whole wheat flour and dry roast on low flame until fragrant (4-5 minutes).
-Let it cool.
-In a bowl,add roasted whole wheat flour,gram flour,semolina,cardamom powder,nutmeg powder, baking powder,salt,baking soda,mix well & set aside.
-In a bowl,add ghee & whisk well for a minute.
-Add powdered sugar & whisk well.
-Add yogurt & whisk well.
-Add dry ingredients,mix well & gently bring together the whole mixture to a dough (dont knead).
-Take 1 tbs of dough,make a ball (35g),lightly roll them in your palms and slightly flatten them (makes 12-13).
-Grease baking tray with oil & lined with butter paper.
-Place them in a baking tray,apply egg yolk with the help of brush,add almonds & press gently (keep some space between them as they expand while baking).
Baking without Oven:
-In pot,add 1 pack of salt,place wire rack (minimum 2high) and preheat on medium flame for 15 minutes.
-Place prepared nankhatai tray,cover and bake in pot on medium flame for 20 minutes.
Baking in Oven:
-Bake in preheated oven at 180 C for 20 minutes.
-When cooled,store the nankhatai in an airtight container.
-Serve with tea!

Ajza:
-Chakki ka atta (Whole wheat flour) sifted 1 Cup
-Baisan (Gram flour) Cup
-Sooji (Semolina) 2 tbs

-Baking powder 1 tsp
-Namak (Salt) 1 pinch
-Baking soda tsp
-Ghee Cup
-Powdered Sugar Cup
-Dahi (Yogurt) whisked tbs
-Anday ki zardi (Egg yolk) whisked 1
-Badam (Almonds) chopped

-Frying pan mein chakki ka atta dal dein aur halki ancch per khushbu anay tak dry roast ker lein (4-5 minutes).
-Thanda ker lein.
-Bowl mein roasted atta,baisan,soji,elaichi powder,jaifil powder,baking powder,namak aur baking soda dal ker ache tarhan mix ker lein & side per rakh dein.
-Bowl mein ghee dal ker 1 minute kliya ache tarhan mix ker lein.
-Powdered cheeni dal ker ache tarhan whisk karein.
-Dahi dal dein aur ache tarhan mix ker lein.
-Dry ingredients dal ker ache tarhan mix karein aur whole mixture ko gently gather ker ka dough bana lein (dont knead).
-1 tbs dough lein aur ball (35g) bana lein,lightly plams per roll karein aur slightly flat ker lein (12-13).
-Baking tray ko oil sa grease karein aur butter paper laga lein.
-Baking tray per nankhatai dough rakh dein aur brush ki madad sa anday ki zardi laga lein,badam laga ker gently press ker lein (keep some space between them as they expand while baking).
Baking without Oven:
-Pot mein ek pack salt dal ker wire rack rakh dein (minimum 2high) aur 15 minutes kliya preheat ker lein.
-Tayyar nankhatai tray rakh ker dhak dein aur darmiyani ancch per 20 minutes kliya pot mein bake ker lein.
Baking in Oven:
-Preheated oven mein 180 C per 20 minutes kliya bake ker lein.
-Jab thandi ho jayein toh airtight container mein dal ker store ker lein.
-Chai ka saath serve karein!
