Arugula Walnut Pesto makes for a quick and tasty meal. It's key ingredients are arugula, parsley, walnuts, olive oil, garlic a little bit of pecorino romano cheese, and lemon. It does have a 'secret' ingredient. Can you guess what that is? It's sherry vinegar! It makes a huge difference and the acidity of this and the lemon really make this a stand out pasta dish. Consider adding additional vinegar if you feel the flavor needs a little more pop. I tried adding a splash of lemon juice and a dash of the vinegar on two different occasions.
