Apple and Angoor Sabzi | Apple Tasty Delight | Sanjeev Kapoor Khazana

An unusual recipe, this Apple and Angoor Sabzi may sound like a dessert to you, but it is, in fact a main course, tasting beautifully with any Indian Bread.

APPLE AND ANGOOR SABZI

Ingredients

1 medium red Washington Apple
1 medium green Washington Apple
1 cup halved black grapes (angoor)
1 tbsp oil
1 tsp cumin seeds
1 medium onion
2-3 dried red chillies
¼ cup boiled corn kernels
4-5 baby corn, diagonally sliced and blanched
3-4 button mushrooms, sliced
¼ tsp turmeric powder
1 tsp red chilli powder
Salt to taste
6-8 fresh coriander sprigs
2 tbsps fresh cream
A pinch of garam masala powder
¼ cup mixed capsicum triangles (red, yellow and green)
Fresh mint sprig for garnishing

Method

1. Heat oil in a non-stick pan. Add cumin seeds and let it change its colour.
2. Finely chop onion.
3. Add red chillies and chopped onion to the pan and sauté till golden brown.
4. Deseed and roughly chop green Washington Apple and blend into a smooth puree along with 2-3 tbsps water.
5. Add the green apple puree to sautéed onion and mix. Add corn kernels, baby corn and mushrooms, mix and cook for 1-2 minutes.
6. Deseed and chop red Washington Apple, add to the pan and mix. Add turmeric powder, chilli powder and salt, mix, cover and cook till the red apple softens.
7. Finely chop coriander sprigs.
8. Add cream, garam masala powder, black grapes, mixed capsicum, chopped coriander leaves and salt to the pan, mix and cook for 2-3 minutes.
9. Serve hot garnished with mint sprig.
