Amala kadhi is very tangy and tastes excellent with hot steamed rice. Amla kadhi is a dish that is very popular. Usually, sour tastes have a cooling effect on the body, so kadhis are prepared during the summer months in India. Food is central to all cuisines, but sometimes it is easy to forget how much flavor you can squeeze out of humble ingredients.

AMLA KADHI

Ingredients

1-2 Indian gooseberries (amla), roughly chopped
5-6 garlic cloves
2 tsps cumin seeds
2 tsps coriander seeds
2 dried red chillies
½ cup scraped fresh coconut
2 tbsps ghee
3-4 cloves
2 inch cinnamon stick, broken
¼ tsp fenugreek seeds (methi dana)
1 large onion, thinly sliced
1½ tsps Tata Sampann Chilli Powder
¼ tsp turmeric powder
½ tsp coriander powder
¾ tsp cumin powder
Salt to taste
1½ cups buttermilk
Fresh coriander sprig for garnish
Steamed rice to serve

Method

1. Dry roast garlic cloves, cumin seeds, coriander seeds and dried red chillies in a non-stick pan till fragrant. Transfer into a blender jar, add coconut, Indian gooseberries and ½ cup water and blend to a fine powder.
2. Heat ghee in a non-stick deep pan, add cloves, cinnamon stick and fenugreek seeds and sauté till fragrant.
3. Add onion and mix and sauté till translucent. Add the blended paste, and sauté for 1-2 minutes.
4. Add 1 cup water, mix, add Tata Sampann Chilli Powder, turmeric powder, coriander powder, cumin powder and salt and mix. Cook for a minute, cover and cook for 3-4 minutes or till the oil separates.
5. Add buttermilk, mix and let it come to a boil, simmer for 2-3 minutes. Switch the heat off and transfer into a serving bowl, garnish with coriander sprig and serve hot with steamed rice.
