Aloo Cheese Paratha
Recipe in English:

Ingredients:
Prepare Dough:
-Safed atta (White flour) sifted 2 Cups
-Maida (All-purpose flour) sifted 1 Cup
-Namak (Salt) 1 tsp or to taste
-Sugar powdered 2 tsp
-Dahi (Yogurt) whisked Cup
-Lukewarm water 1 Cup or as required
-Olpers Tarrka desi ghee melted 1 tbs
-Olpers Tarrka desi ghee melted 1 tsp
Prepare Potato Filling:
-Aloo (Potatoes) boiled kg
-Lal mirch (Red chilli) crushed 1 tsp
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Ajwain (Carom seeds) crushed 1 tsp
-Chaat masala 1 tsp
-Namak (Salt) 1 tsp or to taste
-Baisan (Gram flour) roasted 2 tbs
-Hari mirch (Green chilli) chopped 1 tbs
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Podina (Mint leaves) chopped 1-2 tbs
-Olpers Cheddar cheese as required
-Olpers Mozzarella cheese as required
-Olpers Tarrka desi ghee melted
-Olpers Mozzarella cheese as required
-Olpers cheddar cheese as required
-Lal mirch (Red chilli) crushed
-Hara dhania (Fresh coriander) chopped

Directions:
Prepare Dough:
-In a bowl,add white flour,all-purpose flour,salt,sugar & mix well.
-Add yogurt,gradually add lukewarm water,mix well & knead until dough is formed.
-Add desi ghee & knead dough again.
-Grease with desi ghee,cover & let it rest for 15 minutes.
Prepare Potato Filling:
-In a bowl,add potatoes & mash well with the help of masher.
-Add red chilli crushed,coriander seeds,cumin seeds,red chilli powder,carom seeds,chaat masala, salt,gram flour,green chilli,fresh coriander,mint leaves & mix until well combined.
-Grate cheddar cheese & mozzarella cheese,mix them both & spread on a clean working surface.
-Now take a potato filling (100g) & mix with cheeses then make a smooth ball.
-Knead dough again until smooth,take a small dough (140g),make a ball & spread with the help of fingers.
-Place prepared potato & cheese ball in the center of the dough,fold all sides & seal properly.
-Press the dough,sprinkle dry flour,prick with skewer & roll out dough with the help of rolling pin.
-On heated griddle,place paratha & fry from both sides with desi ghee.
-On one side of paratha,add grated mozzarella cheese & cheddar cheese,sprinkle red chilli crushed, fresh coriander & flip the other side of paratha over it & cook from both sides until cheese melts (makes 6-7).
-Cut into pieces & serve!

-Bowl mein safed atta,maida,namak aur cheeni dal ker ache tarhan mix ker lein.
-Dahi aur thora ker ka neem garam pani shamil karein aur ghond ker dough tayyar ker lein.
-Desi ghee dal dein aur dubara ghond lein.
-Desi ghee sa grease ker lein aur dhak ker 15 minutes kliya rakh dein.
Prepare Potato Filling:
-Bowl mein aloo dal dein aur masher ki madad sa ache tarhan mash ker lein.
-Lal mirch crushed,sabut dhania,zeera,lal mirch powder,ajwain,chaat masala,namak,baisan,hari mirch,hara dhania aur podina dal ker ache tarhan mix ker lein.
-Cheddar cheese & mozzarella cheese ko grate ker lein aur dono ko mix ker lein aur clean working surface per pheela lein.
-Aloo filling (100g) la ker cheese mein mix ker lein phie smooth ball bana lein.
-Dough ko smooth hunay tak dubara ghond lein,small dough (140g) la ker ball bana lein aur fingers ki madad sa pheela lein.
-Tayyar aloo & cheese ball ko dough ka center mein rakh dein aur sides ko fold ker ka properly seal ker lein.
-Dough ko press ker lein aur maida chirak ker skewer ki madad sa prick karein aur rolling pin sa bail lein.
-Tawa garam karein aur paratha rakh ker dono sides sa desi ghee mein fry ker lein.
-Paratha ki ek side per grated mozzarella cheese & cheddar cheese,lal mirch crushed aur hara dhania dal dein aur flip ker ker lein aur cheese melt ho janay tak paka lein (makes 6-7).
-Pieces mein cut ker ka serve karein!
