Give this achari bengan recipe a try and share your feedback with us.#AchariBengan #Bengan #SooperChefIngredients for achari masala: Nigella seeds 1 tsp Mustard seeds 1 tsp Fennel seeds 1 tsp Coriander seeds 1 tbsp Cumin seeds 1 tbsp Ingredients for eggplant: Eggplants 500g Salt to taste Fenugreek seeds 1/2 tsp Red chili flakes 1 tsp Red chili powder 1 tsp Turmeric powder 1/4 tsp Tomatoes (chopped) 1 cup Onion (Chopped) 1 cup Oil 1/2 cup Ginger garlic paste 1 tbsp Vinegar 1 tbspDirections: Step 1: In a pan dry roast coriander seeds, cumin seeds, nigella seeds, mustard seeds and fennel seeds for one minute. Step 2: Add all the roasted spices in a grinder and grind until you get a fine powder. Your achari masala is ready.Step 3: Cut eggplants into four pieces and soak in water with vinegar for 10 minutes. Step 4: Strain the eggplants and sprinkle 1 tablespoon of achari masala. Step 5: Heat oil in a pan, add onion and cook until translucent. Step 6: Add ginger garlic paste in it and cook it for a minute. Step 7: Then add tomatoes and cook for 2 to 3 minutes.Step 8: Add salt, fenugreek seeds, red chili powder, red chili flakes, turmeric powder, one tablespoon of achari masala and cook for a minute on medium low flame.
