Achaari Khichdi Recipe ! Pickled Khichdi ! अचारी खिचड़ी ! Restaurant Style Dal Khichdi
Ingredients List
Toor dal - 1 cup
Soaked dal
Water as required
Turmeric powder - 1/2 tsp
Salt to taste
Coriander seeds - 2 tbsp
Cumin seeds - 1 tsp
Fennel seeds - 1 tsp
Fenugreek seeds - 1/3 tsp
Dry red chilli - 5 no’s
Toast on low heat for – 2 min
Yellow mustard seeds - 2 tsp
Gobindobhog rice - 1 cup
Wash & soak the rice for – 15 min
Oil - 1 tbsp
Clarified butter (ghee) - 1 tbsp
Asafoetida (hing) - 1/4 tsp
Turmeric powder - 1/2 tsp
Hot water - 600 ml
Salt to taste
Clarified butter (ghee) - 2 tbsp
Cumin seeds - 1 tsp

Cooking Steps
1. Take the Toor Dal in a bowl and wash them properly with water. Let it soak for at least 30 minutes.
2. Add in salt and turmeric powder, mix and close with a lid. Cook till 3-4 whistles.
3. For Achaari masala , add coriander seed, cumin seeds, fennel seeds, fenugreek seeds and dry red chilli in a pan and roast it for 2 minutes.
4. Add yellow mustard seeds and roast until aromatic.
5. After cool down, grind all masala mix.
6. Take the Gobindobhog rice in a bowl and wash them properly with water. Let it soak for at least 15 minutes.
7. In heated pan, add oil, clarified butter, asafoetida(Hing), soaked rice and fry for 2 minutes.
8. Add turmeric powder, roasted masala powder, hot water, salt and cook for 15 minutes.
9. Add cooked dal and water to maintain consistency.
10. For Tadka, take clarified butter, cumin seeds, dry chilli, chilli powder. Mix it
11. Add Tadka in Khichdi, serve hot.
