Add 1 sliced bell pepper and 1 sliced chili pepper, and sautée for 5 minutes. Add 1 cubed eggplant and cook, covered, for a further 5 minutes.Add 2 cubed zucchini and continue cooking, covered. After 2 minutes, add 5-10 cherry tomatoes, halved. Salt to taste. Cook, covered, for 10-15 minutes, or until all of the vegetables are tender and slightly creamy.
