This is how to get 8x as much Juice from a lime and 10x The Flavour - Cocktail Super Juice

This basis of this technique - using acid and citrus essential oils (oleo citrate) to create the illusion of fresh juice - is as old as cocktails themselves. But this practice took a backseat with the advent of fresh citrus all year round and the peer pressure to only use fresh juice. Oleo saccharum is the sugar based version of oleo citrate.
Enter Nickel Morris, co-owner of Expo in Louisville, he wanted to find a way to use all of the citrus more responsibly. He combined a few forgotten techniques and then smoothed the process to create this Super Juice.
For every 100g of lime peel add:
40g Citric acid
30g Malic acid
1.6L Water

eg:
If I had 45g of peel - 45g x 0.4= 18g Citric acid
- 45g x 0.3= 13.5g Malic acid
- 45g x 16= 720g /mL Water
