1938 Tapioca Meat Loaf Recipe - Old Cookbook Show - Glen And Friends Cooking - Juicy Meatloaf RecipeSavory Meat Loaf2 thin 2-inch slices salt pork, diced2 tablespoons minced onion2 pounds round beef, ground½ cup minute tapioca2½ teaspoons salt¼ teaspoon pepper2 cups strained canned tomatoes (juice and pulp)Fry out salt pork, add onion, and cook until golden brown. Add pork, onion, and drippings to other ingredients and mix thoroughly. Bake in loaf pan in hot oven (450ºF) 15 minutes; then decrease heat to moderate (350ºF) and bake 30 minutes longer, or until done. Serve hot or cold. Garnish with parsley.
