1930’s Depression Era Cheese Custard Recipe | Glen And Friends Cooking

We are back in the kitchen with another depression era recipe from a cookbook published in 1930 - 1930 Cheese Custard Recipe.

Ingredients:
1 pound cottage cheese
1 cup granulated sugar
4 eggs separated
1 bottle cream (250 mL whipping 35% cream)
grated rind of one lemon
2 scant Tbsp flour


Method:
Preheat oven to 375ºF.
Rub cottage cheese through a fine sieve.
Mix in lemon zest, sugar, flour, salt and egg yolks.
Whip egg whites, and the cream to stiff peaks.
Fold cream into cheese mixture.
Fold egg whites into cream mixture.
Transfer to a buttered baking dish, and bake for 10 minutes.
Reduce oven temp to 325ºF and bake 50 minutes more.
