Today in Culinary History Glen Cooks a heirloom recipe from an 1899 community cookbook recipe. This is a regional variation of English hotpot - related to but different than a Lancashire hotpot recipe.

1899 Cottage Cookery Hot Pot - Old Cookbook Show
Hot Pot Ingredients:
½ Lb. Beef or Mutton
1 Lb. Potatoes
1 Onion
1 Saltspoon Salt
¼ Saltspoon Pepper
¼ Pt. Water

Method:
Remove everything disagreeable from the meat and cut it into nice sized pieces. Prepare the vegetables and slice them. Put a layer of meat at the bottom of an earthenware dish, then a layer of vegetables. Sprinkle with seasoning. Continue this till all is used. The top layer must be potato. Pour in the water, cover with a greased paper. Bake in a slow oven for two hours. If there is any danger of the stew becoming dry, add more water during the cooking. Remove the paper 5 or 10 minutes before dishing, and brown the potato.
