A traditional snack that is popular in Karnataka and Maharashtra where gram flour is mixed with masalas and vegetables. steamed and then tossed in a fabulous tempering. ZUNKA WADIIngredients1 cup gram flour (besan)2 tbsps oil¼ tsp asafoetida (hing)1 tsp mustard seeds2-3 green chillies, chopped10-12 curry leaves2 tsps finely chopped garlic1 tsp finely chopped ginger1 medium onion, finely chopped¼ cup chopped fresh coriander leaves½ tsp turmeric powder1 tsp red chilli powderSalt to tasteTempering3 tbsps oil1 tbsp white sesame seeds8-10 curry leaves1 tbsp chopped fresh coriander leaves + for garnishScraped fresh coconut for garnishMethod1. Heat oil in a non-stick pan. Add asafoetida and cook for a few seconds. Add mustard seeds and let them splutter.2. Add green chillies and curry leaves and sauté for a few seconds. Add onion and sauté till translucent. 3. Add turmeric powder and red chilli powder and mix well. Add 1½ cups and let it come to a boil. 4. Add gram flour and salt and continuously whisk till well combined and the mixture thickens. 5. Transfer the mixture into a greased thali and spread it evenly. Level out the top and set aside to cool completely.6. De-mould and cut into squares. 7. Heat oil in another non-stick pan. Add white sesame seeds, curry leaves and coriander leaves and sauté for a few seconds.8. Add the cut squares and toss till well combined. 9.
