Zucchini Pasta | Sanjeev Kapoor Khazana

Zucchini strips used in place of pasta to make this unique interesting healthy recipe.

ZUCCHINI PASTA

Ingredients

1 cup mixed green and yellow zucchini, cut into strips and soaked
1 tablespoon olive oil
1 tablespoon chopped garlic
1 medium onion, finely chopped
6-8 cherry tomatoes, halved
Salt to taste
Black pepper powder to taste
1 small carrot, cut into thin strips
2 tablespoons fresh cream
½ tablespoon parmesan cheese powder
5-7 basil leaves + for garnishing
Parmesan cheese shavings for garnishing

Method

1. Heat olive oil in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté till translucent. Add cherry tomatoes, mix and cook for a minute.
2. Add salt, pepper powder, mix and cook for a minute. Add zucchini strips and carrot strips, mix and cook for a minute.
3. Add cream and mix well. Switch off heat, add parmesan cheese powder and torn basil leaves and mix well.
4. Serve hot garnished with parmesan cheese shavings and basil leaves.
