GUILT FREE!Here's the vegetable spiralizer I use:http://www.amazon.com/Kinbar-kinbar-slicer-001-Spiral-Vegetable-Slicer/dp/B00IL3MGB4/ref=sr_1_3?ie=UTF8&qid=1405008444&sr=8-3&keywords=vegetable+spiralizerRECIPEIngredients4 cups chopped cauliflower, boiled until tender1 Tbsp garlic2oz neufchatel cheese1/3 cup almond milk1/3 cup broth (vegetable or chicken)1/3 cup parmesan3/4 tsp salt1/8 tsp pep1/2 tsp dried parsleyZucchini for spiralizing into pastaOptional peas for toppingProcedureCombine all ingredients in a food processor. Adjust seasoning to taste, and texture to preference, by adding milk if necessary.Spiralize zucchini. I use about 1 zucchini per serving. You can eat zucchini raw OR I prefer to blanch it in hot water for 1-2 minutes.
