This week, Alyssia teaches you how to make her HEALTHY homemade Alfredo sauce with zucchini noodles! GUILT FREE!

Here's the vegetable spiralizer I use:

RECIPE

Ingredients
4 cups chopped cauliflower, boiled until tender
1 Tbsp garlic
2oz neufchatel cheese
1/3 cup almond milk
1/3 cup broth (vegetable or chicken)
1/3 cup parmesan
3/4 tsp salt
1/8 tsp pep
1/2 tsp dried parsley
Zucchini for spiralizing into pasta
Optional peas for topping

Procedure
Combine all ingredients in a food processor. Adjust seasoning to taste, and texture to preference, by adding milk if necessary.
Spiralize zucchini. I use about 1 zucchini per serving. You can eat zucchini raw OR I prefer to blanch it in hot water for 1-2 minutes. (This sauce can of course also be used over normal pasta and still significantly lightens the dish!)
Heat in a pot over low heat to warm before coating pasta!
Coat pasta, top with optional peas, devour!

per serving, sauce ONLY (1/4 cup, yields about 2 cups total): 46 calories | 4g carbs | 3g fat | 3g protein
